Serves 4-5 persons

An inviting egg curry that is loved by all at home. There are numerous versions of egg korma floating round the internet. But today’s recipe is bookmark-worthy. The combination of heady spices, fresh mint and coconut sauteed along with the onion-tomato base gives the egg kurma its unique flavor that is hearty and comforting. Makes a great side with biryani or flavored rice.
Ingredients:
5-6 boiled eggs
2 onions, finely chopped or sliced
1 tsp ginger garlic paste
1 large tomato, chopped
1 tsp red chilli pwd
1/4 tsp turmeric pwd
1 tsp coriander pwd
salt to taste
few curry leaves
8-10 fresh mint leaves
2 tbsps oil
chopped coriander leaves for garnish
Dry roast for 2 mts and grind to a paste:
3/4 tsp saunf
1 tsp khus khus
1″ cinnamon
1 cardamom
2 cloves
4-5 tbsp grated fresh coconut
5-6 cashew nuts
1. Heat oil in a heavy bottomed vessel, add chopped onions and fry till transparent. Add ginger-garlic paste and mint leaves and saute for 3 mts. Add curry leaves, red chilli pwd, turmeric pwd, coriander pwd and salt and combine. Add the chopped tomatoes and fry for 4-5 mts.
2. Add the ground paste and cook for 7-8 mts, stirring so that it does not stick to the vessel.
3. Add the boiled eggs and combine. Cook without lid for 3-4 mts. Add 2 cups of water and cook with lid on simmer till the gravy thickens. Garnish with chopped coriander leaves. Turn off heat.
4. Serve with pulao, biryani, coconut rice or rotis.

Paneer Butter Masala

I can eat Paneer Butter Masala almost every day, but this saturday, our cravings were at a peak-time high as there was light rain outside. Everyone knows I just love Paneer Recipes, and this weekend I decided to make the eternal favorite Paneer Butter Masala, that velvetty-smooth gravy that has all the goodness of indian spices combined with cubes of cottage cheese and garnished with cream and coriander! Now do I have your attention??! Paneer Butter Masala is similar to other paneer gravies, except that as the name implies, it is more rich due to butter and the gravy is thickened by using onions, tomatoes and cashew paste rather than just cream. You cannot go wrong with this, try it for yourself and see!
Believe me, paneer is such a versatile ingredient in Indian cooking, you could make an entire meal using just this, right from appetizers to main course to dessert! Hey maybe they should choose paneer as the next secret ingredient for Iron Chef!:) Till then, try this mouth-watering recipe (adapted from Sanjeev Kapoor's cookbook) at home and enjoy its taste as it lingers on your tongue and your senses!
Ingredients:
3 big tomatoes - pureed
250 gms paneer - cubed
2 big onions
1 bay leaf
2 cloves
1 tbsp ginger-garlic paste
1 tsp red chilli powder
3 tbsps cashewnut paste
1/2 tsp turmeric powder
1 tsp dhania powder (dry coriander powder)
1/2 tsp kasuri methi (dry fenugreek leaves)
1 tsp tandoori masala (optional for color)
2 tsp garam masala powder
salt and lemon juice - to taste
3 tbsp butter
3 tbsp fresh cream
fresh coriander - chopped for garnish
Method:
Skin the onions and blanch them in hot water for 3 mins, then ouree them to form a paste. Do the same with tomaotes, unless you are using tomato puree directly.
Take 1 tbsp of ghee, heat in a pan for 2 mins, the saute the paneer cubes in it till golden brown; Now take 1 cup hot water, add a pinch of salt and turmeric powder to it and immerse the paneer cubes in it for 10-12 mins. Then remove the pieces, drain them on a tissue paper and keep aside.
Heat 2 tbsp of butter in a pan, add the bay leaf and the cloves
, then add the onion paste and saute till light-brown. Add ginger-garlic paste. Saute for 3 minutes. Add chilli powder, followed by the cashew paste and fry for 5 mins.
Add tomato puree, crushed kasuri methi,coriander powder, turmeric powder, garam masala and salt. Stir and let it simmer for some time.
Add the paneer cubes and simmer for 4-5 minutes. Add a small cup of water and let it cook on medium heat till you get the desired curry consistency. Remove from fire, stir in remaining butter and fresh cream.
Garnish with coriander leaves. Serve the Paneer Butter Masala with any bread of your choice, pulao or simply jeera rice.

Potato, Apple and Arugula soup

You need:
2 tbsp Butter,
2 large red waxy potatoes, peeled and cubed,
1/2 red Onion, chopped into big pieces,
2 Tart Apples, cut into chunks,
2 cups Arugula, chopped to half if they are large,keep them whole if they are young and tender.(You can use baby Spinach too to replace Arugula)
1 large bottled roasted red bell pepper,chopped,
1/2 cup canned Kidney Beans,
4 cups Vegetable Stock,
1 tsp Allspice powder,
salt and pepper and 2 tsp Lemon juice.
Any crusty bread you like to serve with soup. I had Pretzel bread roll.
To make the soup:
1. Heat the butter in a heavy bottomed deep pan. Add onion and potato cubes and saute for 5-7mins stirring constantly.
2. Add in Apples, red pepper, Kidney beans and stir. Pour in the veg stock, Allspice pd, salt and pepper to your taste.
3. Bring to boil, turn down the heat to simmer, cover and cook for 15mins.
4. Add Arugula (or Spinach), lemon juice, simmer until potatoes are fork tender.
5. It's ready eat now but if you want the soup creamy, take out 1/4 of the soup and blend and pour back into the soup. I prefer chunky veggies in thin stock.
6. Garnish with Apple slices or few Arugula and serve it warm in bowls with crusty bread. This serves four people easily. Great comforting soup for cold Winter days!
Menasina Saaru / Pepper Soup

You need these to make the soup:
1. Heat 1 tsp oil and 1 tsp ghee in a deep pan. Add 2-4 garlic finely chopped and few curry leaves to it.
2. Crush 1 tsp Cumin seeds and 2 tsp Pepper corns coarsely and add to this oil. Let them all sizzle gently. Don't let the garlic burn but very slightly golden on the edges.
3. Mix 1 1/2 tsp (or more if you want it very tangy) Tamarind paste (I use Laxmi brand natural Tamarind concentrate which has nice reddish color which I love than darker Tam paste and paste easy to use too) in 2-3 cups of water well.
4. Add this to the pan with salt, bring it to rolling boil for 2 mins or until the raw smell of Tamarind goes and soup smell good. Adjust the salt and add more crushed pepper if you want.
5. Drink this when you have cold, you feel the relief immediately to make you feel better although it doesn't cure your cold. Tastes great with rice too or just as a warm drink on a cold day.
You can add some cilantro to it too, always optional.
Khandvi

A delicious savoury made with gram flour and curds tempered with sesame seeds and mustard seeds.
Cooking Time : 10 to12 min.
Preparation Time : 5 min.
Makes 25 to 30 pieces.
Ingredients
3/4 cup Bengal gram flour (besan)
3/4 cup fresh curds
2 teaspoons green chilli-ginger paste
1/4 teaspoon turmeric powder (huldi)
a pinch asafoetida (hing)
salt to taste
For the garnish
2 tablespoons grated coconut
2 tablespoons chopped coriander
For the tempering
1 teaspoon mustard seeds
1 teaspoon sesame seeds (til)
1/2 teaspoon asafoetida (hing)
3 to 4 curry leaves
4 dry red chillies
2 tablespoons oil
Method
1. Mix together the gram flour, curds, green chilli-ginger paste, turmeric powder, asafoetida and salt with 1 cup of water and make a smooth paste.
2. Transfer into a non-stick pan and heat on a low flame, stirring constantly so that lumps do not form.
3. Keep stirring till the batter becomes thick. Taste the batter to see if the gram flour is cooked. This will take about 7 to 10 minutes.
4. Grease the reverse side of 3 or 4 thalis and spread the mixture as thinly as possible with your hands or a rubber spatula on the greased surface while the batter is still hot.
5. The number of thalis you will need depend upon on how thinly you can spread the batter.
6. When you have finished spreading the batter on the last thalis, go abck to the first one you spread the batter on and roll up carefully like a Swiss roll. Repeat with the other thalis.
7. Cut 25 mm. (1") pieces out of each big roll to get bite-sized khandvis. Place these on a serving dish.
8. To prepare the tempering, heat the oil and add the mustard seeds, sesame seeds, asafoetida, curry leaves and red chillies and stir for 30 seconds.
9. Pour over the khandvis and serve garnished with the coriander and coconut.
Tips:
This is difficult item to make requiring your full attention. Do not do anything else while making these.
If the curds are very fresh, add 1/4 teaspoon citric acid crystals to the mixture.

Kasutera

Kasutera is a spongy, eggy Japanese Honey cake which is not very sweet or naturally sweet with honey, hence do not need icing. Without adding any kind of essence, it has a wonderful aroma of honey and with just a dusting of confectioner's sugar on top, not too sweet either which is how I like my desserts!
This recipe is adapted from a 'Learn to cook' book series called "Japanese Homestyle Dishes". Usually, I don't cook any Japanese food at home or interested in trying either. I ran...well...drove to the library, borrowed this book. Kasutera sounded and looked good, so glad I tried it! I read that it's a popular dessert cake in Nagasaki, Japan, originally brought to Japan by Portuguese.
5 large Eggs, 2/3rd cup Powdered sugar, 1/4 cup Honey, 1 tsp Baking powder, 1 cup All purpose flour or Cake flour. (9" by 9" cake pan, lined with parchment paper and sprayed with no-stick oil or butter.
(You can add 1 tsp of essence of your choice like Orange or Lemon, but recipe didn't say and I didn't add any either, loved the natural honey taste and aroma!)
For dusting: 1/4 cup extra powdered sugar for dusting the cake on top. You can even dust it with cocoa powder for contrast.
To bake the cake:
Preheat the oven at 350F.
1. In a mixer with whisk attachment, add 5 Eggs and beat until frothy.
2. Add in the Honey and powdered sugar, beat this mix for 10 to 12 mins, until it's thick, pale in color and beater leaves a ribbon when lifted.
(This 2nd step is very important to keep the cake fluffy and bake high, so do beat well until you see the trail of ribbon with the batter before adding the flour etc)
3. Now, add the baking powder and flour gradually, mix and fold or beat on low speed gently just until flour is well incorporated.
4. Pour into prepared pan and bake for 25 to 30 mins or until skewer when tested in the center of the cake comes out clean. Don't bake too much.
5. Invert on a cooler, peel off the parchment paper.
6. When completely cooled, dust the top with powdered sugar and cut into slices to serve.

Pineapple-Coconut mini Bundt cake

A sneak peek inside the cake :)
You Need: Makes one 9 1/2" X 5 1/2" loaf
Preheat the oven to 350F.Grease and flour a loaf pan or line with parchment paper.
1 1/2 cups chopped Pineapple,2 Eggs,1/2 cup vegetable oil,3/4 sugar, 2 cups plain flour,1/2 tsp Cinnamon pd,1 tsp baking pd,1/2 tsp baking soda,1/4 tsp Nutmeg pd,1/2 tsp salt,1/2 cup sweetened Coconut,3 tbsp Walnuts.(I used low sugar chunky Pineapple preserve as you can see!)
How to bake them:
In a bowl,beat eggs until fluffy,add oil,sugar,beat until light.Mix in Pineapple.Mix all the dry ingredients seperately and add to the wet mixture and mix just until combined but don't overmix. OR you can blend in a processor except Pineapple and when mixed,add in Pineapple and combine by hand.
Spoon the batter into the pan,tap gently to release the bubble and put it in the oven in the middle rack.Bake this for 50-55 mins or until knife inserted in middle of the cake comes out clean.Invert and cool on the rack.Serve sprinkled with sugar pd or by itself.Either way ,it's delicious!
Gobi Aloo Tamatar Masala

iber contents of Aloo-Gobi-Tamatar: 1 medium baked potato with skin has 3.8 gms of fiber and 1 cup of Cauliflower has 3.35 gms of fiber, 1 small onion has 1gm of fiber and 1 Tomato has 1.4gms of fiber!
Gobi Aloo Tamatar masala:
The title literally means Cauliflower, Potato, Tomato in spices, you can make this with or without sauce. You can add any veggies like green peas and cooked beans to this recipe. Just make sure that you don't cook the veggies to death which leaves the dish without any nutrition! :)
To make it, you need:
1 small head of Cauliflower, 1 large red Potato peeled or leave the skin for more fiber and cubed, 1 large Tomato chopped 1/4 cup Tomato sauce, 1/4 tsp turmeric, cilantro.
Season: 1 tbsp oil, 1/2 tsp Cumin seeds, 1 small onion finely chopped, 1" ginger grated or ground.
Dry spices: 1 tbsp Coriander seeds powder, 1/2 tsp or more Chilli pd, 1/2 tsp Garam masala, add 1/4 tsp Cardamom powder and 1/4 tsp Fennel seeds pd at the end for that special fragrant touch!
To Make the masala:
1. Cut the flowerettes and bake them on a sheet in a single layer at 450F oven for 20 mins or spray some oil on top and Microwave them for 3-5mins or until you see reddish spots on top.
2. Heat oil in a non-stick pan, add Cumin seeds, chopped onion and fry until reddish. Add ginger, stir and then cubed Potato, a tbsp of water, cover and cook for 2 minutes. If potato is cooked before in the MW, it's even easier!
3. Put in all the dry spices like turmeric, Tomato sauce or Tomato pieces. Cook for 1 minute or until oil shows.
4. Now add all the almost cooked Cauliflower, salt, add about 2tbsp or more water, stir fry until almost dry, unless you want some sauce. In that case, add more water or veg stock to it.
5. Garnish with cilantro and lime juice.
Serve with whole wheat rotis for even more fiber kick or serve on a bed of cooked Quinoa, you will be in nutrition Heaven! :D

Baby Lima or Butter beans

Baby Lima or Butter beans,potato and Cilantro Kurma
You need:
2-3 cups of baby Lima or Butter beans, (I used frozen pack), 1 Potato, peeled and cubed, Salt, 1 tsp butter (optional, tastes great if you add it).
Seasoning:
1 tbsp oil, 1 small onion, minced.
To grind:
2 garlic, 1" ginger, 4 tbsp fresh or dry Coconut, 2 tsp Poppy seeds, 2 tbsp Yogurt, 3 cloves, 1" Cinnamon, 1/2 cup packed Cilantro leaves (don't use it's stem which has powerful flavor and aroma, bit too much for this dish), few curry leaves, 2 or more green chillies.
To make Kurma:
1. Thaw the beans and cook with cubed potatoes with half a cup of water in the microwave for about 7mins, set aside.
2. Grind the masala until smooth with very little water.
3. Heat oil in a non-stick pan, add and fry minced onion until soft. Add the ground masala and yogurt, saute until raw smell goes and it leaves the side of the pan.
4. Now, add the cooked beans and potato, mix well. Simmer for 3 mins.
Add a dab of butter if you like, mix and serve with Parathas. Tastes better the next day!
You need:

2 garlic, 1" ginger, 4 tbsp fresh or dry Coconut, 2 tsp Poppy seeds, 2 tbsp Yogurt, 3 cloves, 1" Cinnamon, 1/2 cup packed Cilantro leaves (don't use it's stem which has powerful flavor and aroma, bit too much for this dish), few curry leaves, 2 or more green chillies.
To make Kurma:
1. Thaw the beans and cook with cubed potatoes with half a cup of water in the microwave for about 7mins, set aside.
2. Grind the masala until smooth with very little water.
3. Heat oil in a non-stick pan, add and fry minced onion until soft. Add the ground masala and yogurt, saute until raw smell goes and it leaves the side of the pan.
4. Now, add the cooked beans and potato, mix well. Simmer for 3 mins.
Add a dab of butter if you like, mix and serve with Parathas. Tastes better the next day!

An all-activity craft : drawing, cutting, sticking and painting and at the end, a moving toy.
Winged dragon, or maybe a lizard or snake, it's up to you...
You need :
* Cardboard rolls (toilet paper or paper towel rolls)
* brads
* children's paint
* sheets of thick colored paper for the legs and wings (unless you want to paint these as well)
The different steps :
step 1: Print the patterns. They've been reduced to a quarter of real size.You can print them out in the full page and let the computer do the work or resize them by plus 400% before printing.

step 2: Cut out each pattern
Transfer the patterns onto the cardboard rolls. On the rolls, trace the head and the tail once, and the body 5 to 7 times. Cut out with scissors.

step 4: Paint the head, body and tail : we've chosen 2 different colors for the back and belly.

Fenugreek Leaves Fritters / Methi Vadas

You Need:
1 cup Yellow Cornmeal,1/2 cup Plain flour,1 tbsp Cornstarch,1 cup fresh or 1/2 cup frozen Fenugreek leaves(Methi),1/2 tsp sugar(yes,sugar!),salt,few green chillies chopped,1 medium Onion minced,1 tsp grated ginger, 1/4 tsp baking soda,3 tbsp hot oil,and some Cilantro(optional)
How To:
Mix all the above dry ingredients and add hot oil and mix.Add enough hot water to make a thickish dough and keep it aside for 10 mins.It must not be thin which makes it soggy and too soft to make shapes and fry.
Heat enough oil to deep fry around 370F, and take 1-2 tbsp of dough and drop it carefully into the oil.Fry rolling them on all sides to a golden color and drain on paper towel.Make sure oil is at the right temp. Too hot,Vadas burn on the outside and still raw inside.If oil is not hot enough, Vadas sucks too much oil and becomes very soggy.
Serve these delicious tasting and very crispy Methi fritters with any sweet and tangy sauce you have like Delhi Chaat sauce or just as they are with coffee or Tea or with Kadhi and rice as a sidedish as well.
Aloo Biryani with Cucumber Raita

I made this Aloo Biryani the easy way. Instead of cooking and layering like the usual Biryani is done, I mixed the masala to already cooked rice and sauteed Potatoes like Pulao. Instead of Aloos, you can also add mixed veggies or meat to this Biryani masala too.
Also I am not supposed to use exact measures as per the rules of this event and recipe should be easy enough for a 10yr old to make this dish, so I threw in some "this and that" to make this Biryani. I cooked, peeled and sauteed the Potato cubes with a bit of salt in little oil first to make it easy to cook. Have fun!
Aloo Biryani:
1. Cook rice with pinch of salt, some lemon juice and bit of ghee, spread on a plate to cool. Prepare the Potatoes as above and set aside.
2. Heat oil, add few raisins, few cashews, few cloves, cinnamon pieces, crushed Cardamom pods.
3. Add about 2 handfuls of minced onion, fry until golden. Add ginger and garlic paste, saute for a minute.
4. Sprinkle coriander seeds powder, Cumin seeds powder, pepper powder, chill pd, pinches of turmeric, bit of garam masala, salt stir for a minute. Add some milk mixed with a pinch of saffron and Rose water, simmer until thickish paste. Ground poppy seeds added to Biryani will give a special taste.
5. Add potato cubes and rice and mix everything well. Adjust the spices and salt. You can garnish the Biryani with toasted Almond slivers if you like. Serve with Cucumber raita.
Cucumber Raita:
Mix enough yogurt, few pinches of salt, pepper pd, few cilantro and mint minced and cumin seeds powder and peeled and cubed cucumber pieces. Let it rest for a while before serving.
Serve with Biryani and enjoy! :)

1) IBM --- Right now this is the most firing company for IT professionals. In the last 6 months, this company has fired nearly 20% of their employees because of BG check and performance issues. This is the most insecure company from an IT professional's point of view. They don't have any strategic plans at HR policies regarding employee security. No appraisals (maximum 10%).
2)TCS --- Previously its an government IT Company . Now a days TCS also becoming firing IT company. Recently they fired on 500 people.( the people below 2 years of experience) and TCS losts so many projects recently( especially British Telecom Projects).
3) Accenture --- This is second top most firing company. The firing rate is around 5%. This depends upon outsourced projects; they have a unique system where Accenture development centers around the world bid for a project coming into the company. Currently Philippinescentre is taking the cake and the Indian centers are in a firing mode.
4) WIPRO --- Firing people with very frequent back ground checks and firing them with out even experience letters and relieving letters (will mention as terminated from services)but will promise the employees that they will retain them. After the project is over they will fire away. Will threaten of criminal cases against such employees if they oppose the move and has also filed against some.

Cardboard Fort

here's one for the guys...the fort. This isn't our first one either...
Since Loïc's least favorite part of this was the painting of the fort at the end, we came up with the idea of using black cardboard and corrugated cardboard.
You need :
* A black shoe box, about 12 inches by 8.
* black corrugated cardboard
* Red cardstock, one page
* a few toothpicks
* a stapler
For the four towers, cut out four rectangles in corrugated cardboard, 7 by 10 inches high. Roll the rectangles into a cylinder shape and fix with staples at top and bottom.
Make two 4 inch long cuts in each tower, spaced about 1.5 inches apart.Using the cuts, slot the towers into the box.
Cut strips of corrugated cardboard about 2.5 inches long ready to staple them onto the walls, forming the curtain walls linking the flanking towers...(nothing wrong with a little new vocuablary!) The strips need to overlap the top of the box.
The keep (the last stronghold, which protected the Lord of the castle,), is made from a rectangle of card measuring 8 by 10 inches, (therefore smaller but wider than the others). It must be fixed in the middle of the castle.
Tip for placing the keep. : Use the lid of a round carton. Roll the tower round the lid, pressing it well against the sides. Fix the lid to the center of the castle compound with double sided tape : That should be able to hold off any attacks!
For the upper parts of the towers and walls crenellations are cut out.
The easiest way is to make cuts at half-inch intervals; then fold every other crenellation inwards.
The pointed tower of the keep is created by cutting out a circle in the red cardstock, (using maybe an upturned bowl to draw the circle).
Roll up the circle to form a cone and fix it to the inside of the tower using tape.
Next, an adult can deal with cutting out the drawbridge with a craft knife for a clean cut.
Loïc added a kind of portcullis complete with a mechanism for opening/closing.
Toothpicks are fixed on both sides of the gate and allow it to be moved about.
The gate runs along a strip of paper fixed horizontally.
The icing on the cake! A flag made from a toothpick and a little rectangle of paper wrapped round it is fixed on the top of the cone.
The castle is big enough to fit in some really good figures. So, charge!

Batata vada or Alu bonda with coconut chutney
To make Aloo stuffing:
1. Boil 2 large Potatoes until soft, peel and mash. Heat a bit of oil, add mustard seeds, cumin seeds, chilli flakes, chopped curry and cilantro leaves.
2. Add Potatoes, salt, lemon juice and mix well. Cool and make about 2" balls and keep aside.
To make batter:
Mix 1 portion of Besan/Chickpea flour, few tbsps of rice flour, pinch of bakind soda, enough salt, chilli pd and water to make a thickish batter. Rest it for 10 mins.
To make Bondas:
1. Heat oil to 375F or hot to deep fry. Dip Potato balls in the batter and deep fry until golden.
2. Serve with spicy Chutney; Grind Coconut, green chillies, tamarind or yogurt, ginger, salt with enough water to make chutney. Temper with Mustard seeds

Wikipedia says "The jalfrezi dates from the times of the British Raj when it was created as a way of using leftover meat; the chillies helped to disguise any disagreeable taste. The name comes indirectly from Bengali jhāl, spicy food, and Urdu parhezī, suitable for a diet"
Egg Jalfrezi:
Jalfrezi is a tasty sweet and spicy concoction of Bell Peppers, Tomato and Onion. You can add any vegetable of your choice or mixed veggies, meat or hard boiled Eggs into this thickish gravy.
About Jalfrezi:
There are many ways to make the Jalfrezi, here is my milder version since my kids like milder and sweeter sauce than spicy. You can add green chillies if you like, gives it a nice heat. I added red bell peppers for sweetness and color.
How to make Egg Jalfrezi my way!
Hard boil 6 eggs in water for 15mins, take off the heat, pour out the hot water and add cold water. This makes the Egg shells peel easy after they are cold. Peel the shells, cut the eggs 1/2 way to the center but do not cut it thru' to split them into half.
1. Heat 1 tbsp oil + 2 tsp Butter, add 1tsp Cumin seeds. When they turn reddish, add 1" grated fresh Ginger, saute for 2 mins.
2. Add 2 medium sized thinly sliced onions, saute for 3 mins, until they are soft. Add 2 large red Bell peppers, sliced into the sauce, stir fry for 3 mins, until they wilt a bit and soften.
3. Now, add 2-3 Plum Tomatoes, sliced to the pan, stir again and let it cook and oil shows on top a little, sauce leaves the sides of the pan.
4. Now, add enough salt, 1/4 or more tsp Chilli pd or Paprika (you can add green chillies too), 1/2 tsp Sugar, 1 1/2 tsp Coriander powder, 1/2 tsp good quality Garam masala pd, homemade is better. Mix well and add 3/4 cup water and 1 tbsp cream or full cream milk (optional). Simmer for 5 mins.
5. Take off the heat, adjust the salt and chilli pd. Sprinkle 3 tbsp chopped Cilantro.
Serve with Lemon slices and cooked Basmati rice.

Have you ever wondered what happened to your socks when you put them into the dryer and then never saw them again? It's an unexplained mystery that may never have an answer. Many people feel the same way when they suddenly find that their brokerage account balance has taken a nosedive. So, where did that money go? Fortunately, money that is gained or lost on a stock doesn't just disappear. Read to find out what happens to it and what causes it.
Disappearing money
Before we get to how money disappears, it is important to understand that regardless of whether the market is in bull (appreciating) or bear (depreciating) mode, supply and demand drive the price of stocks, and fluctuations in stock prices determine whether you make money or lose it.
So, if you purchase a stock for $10 and then sell it for only $5, you will (obviously) lose $5. It may feel like that money must go to someone else, but that isn't exactly true. It doesn't go to the person who buys the stock from you. The company that issued the stock doesn't get it either. The brokerage is also left empty-handed, as you only paid it to make the transaction on your behalf. So the question remains: where did the money go?
Implicit and explicit value
The most straightforward answer to this question is that it actually disappeared into thin air, along with the decrease in demand for the stock, or, more specifically, the decrease in investors' favorable perception of it.
But this capacity of money to dissolve into the unknown demonstrates the complex and somewhat contradictory nature of money. Yes, money is a teaser - at once intangible, flirting with our dreams and fantasies, and concrete, the thing with which we obtain our daily bread. More precisely, this duplicity of money represents the two parts that make up a stock's market value: the implicit and explicit value.
On the one hand, money can be created or dissolved with the change in a stock's implicit value, which is determined by the personal perceptions and research of investors and analysts. For example, a pharmaceutical company with the rights to the patent for the cure for cancer may have a much higher implicit value than that of a corner store.
Depending on investors' perceptions and expectations for the stock, implicit value is based on revenues and earnings forecasts. If the implicit value undergoes a change - which, really, is generated by abstract things like faith and emotion - the stock price follows.

10 Must To Do Things When Filing Your Income Tax Returns

With the due date of July 31 fast approaching, it is that time of the year again when the nation’s tax payers scramble to file I-T returns. After
all, filing of tax return is compulsory for everyone whose gross total income exceeds the basic exemption limit.
For financial year 2007-08, for instance, the basic exemption limit was Rs 1.45 lakh for women below 65 years of age, Rs 1.95 lakh for senior citizens and Rs 1.10 lakh for any other individual. However, for financial year 2008-09, the limit has been increased to Rs 1.80 lakh for women below 65 years of age, Rs 2.25 for senior citizens and Rs 1.50 lakh for males below 65 years.
Thus, if your income for the year exceeded the exemption limit, you will be required to file the return by the due date. "You need to file the tax return even if you are not paying any tax or even if your employer has deducted tax at source," says Ashish Kapur, CEO, Invest Shoppe India Ltd.
However, despite all the precautions taken by you, rush-hour filing may mean that you could inadvertently miss out on certain details and disclosures, and therefore be on the bad books of the taxman. If not that, you might just forget to make the most of the tax breaks available to you, thus paying more tax in the process and claiming no or less return.
Here are 10 important things to do before filing your I-T return:
1. Identify Sources of Income
Firstly, you need to identify your sources of income under different heads. Under the I-T Act, all incomes earned by persons are classified into five different heads, such as income from salary, income from house property, income from business or profession, income from capital gains, and income from other sources. Thus, you should identify all your incomes from different sources, just to ensure that you haven’t missed out something while filing your return.
2. Refer to the Basic Documents
According to Vikas Vasal, executive director, KPMG, some basic documents/information that should be referred to while filling the return include:
· Form No 16 (issued by the employer): This shows the income from salary and tax deducted by the employer on the same.
· Summary of all bank accounts during the year: This summary gives an idea about the income earned during the year, investments
made and other expenses. This will ensure that neither any income nor any eligible deductions are left out in the return.
· Details of tax paid during the year: This is required in case the individual has paid any advance tax during the year.
· Income of a minor child: This is to be included (except in few cases) even if it is a small amount, e.g. bank interest.
3. Compute Your Tax Liability
Having identified your sources of income and after referring to the basic documents, you need to compute your tax liability for the year. If you are familiar with the process and are comfortable with doing it, you can do it all by yourself. If not, you should take the help of a tax expert or a CA or some other qualified professional. This is important as a wrong computation of your tax liability can land you in trouble later on.
You also need to ensure that "if any tax is payable, the same has been paid as ‘self assessment tax’ before filing the tax return. Further, if any interest is payable for late payment of tax, then the same has also been deposited," says Vasal.
4. Chose the Right Form
Once the details in respect of income and expenses are collated, you should check which tax return form is applicable to you. With the introduction of new forms, based on the nature of income earned during the year, you should select the right income-tax form.
For example, there are two I-T return forms -- ITR-1 and ITR-2 - available for salaried individuals at the moment, and your sources of income will decide which form to use. Use the first form if your income is from salary, pension or interest earned in the financial year, and use the second one in case of any capital gain, income or loss from house property and income from any other source. There is another form - ITR-4 - which is meant for individuals having income from a business or profession. The Tax Department will refuse to accept your form in case you have chosen the wrong one.
5. Fill in Correct Personal Details
Ensure that you fill in correct personal details in the form meant for you, especially your name, address, bank account details and PAN number. Bank account details include the bank account number, type of account and the bank’s MICR code. "This is crucial, especially if you are claiming a refund. Likewise, your PAN is very important because the tax laws levy a fine for not quoting or misquoting your PAN number," says Kapur.
6. Claim all Deductions
Ensure that you have, under various sections of the I-T Act, claimed all the deductions that you are eligible for. For example,
a. Under Sec 80 C - For investments made like PF, PPF, NSC, school tuition fees of children, insurance premium, investments in specified mutual funds etc.
b. Under Sec 80 G - Donations made to charitable organizations
c. Housing deduction for interest on housing loan etc.
7. Information of Specified Investments/ Exempt Income
You also have to fill in information in respect of specified investments, as per prescribed limits, such as:
# Property bought or sold in excess of Rs 30 lakh
# Mutual funds, in excess of Rs 2 lakh
# Cash deposits in excess of Rs 10 lakh
# Credit card payments in excess of Rs 2 lakh
# Bonds etc in excess of Rs 5 lakh
It is also important to know that certain income that is exempt (i.e. income which is not taxable) is also required to be disclosed in the I-T return form. For example, dividend received and receipt of PF balance, among others. Not disclosing these incomes may land you in trouble also.
8. Claiming a Loss
If you are planning to claim a loss in the income-tax return, which you would like to carry forward, the same can be done, only if the return is filed by the due date. If this filing deadline is not met, then the loss claimed would not be allowed to be carried forward for future set off against income.

After the tax return is filled in, the next step is to file it appropriately, by the due date. Revamping An Old Piece Of Furniture

Here's the starting point, a simple little piece of furniture that can fit into a corner, bought from a thrift shop.
It's so ugly and dirty that nobody would give it a second glance.
What's more, it's made of cheap old plywood. But it was so cheap that I decided to buy it.
Here's how it looked when I first got it.
I wash and sandpaper it. I take off the yellow foam and fill in all the flaws and screw holes with wood filler.
I glue a sheet of thick paper en relief on top.
I spray the feet with silver paint and paint the rest in a light cappuccino shade.
Last of all, using decopatch/paperpatch adhesive, I glue a type of glazed paper used by florists to the door.
When it's fully dry, I apply a layer of glossy glue/varnish.
The next day, I apply a coat of marine varnish over the entire item in order to give it maximum protection against any kinds of stains or splashes. Then I swap the plastic handles for more modern, aluminum ones.
Here's the result.

The base : a rectangular card cut from a yellow/beige cardstock folder.
* Clip the two outside corners with a little punch.
* Choose two paper sheets in contrasting colors to be pasted to this surface: a light green or beige striped sheet and a sheet of light green vellum stamped with leaves and flowers.
* To highlight the contrasts, tear, don't cut the vellum paper.
* Using this vellum paper, practise your embossing with a heart shape, using a stencil and leaning on a glass surface.
* Also stick on a gold metallic sticker : color the raised part with metallic felt tip pens.
* Paste a raised, button-shaped sticker on two, round-edged squares (which match the card's colors and are positioned in a diamond shape to make the link between the different cards and colors).
The letters of your message :

* A raised effect is achieved using adhesive 3D foam squares.

Mixed Vegetable and Lilva / Avarekalu Uppittu

Well... Sahaja wanted a one dish meal and here is my simple yet nutritious one dish Uppittu/Upma I make when I am in a hurry or don't have any left overs to eat. Usually I throw in a frozen mixed vegetable pack here to make veg Uppittu. I love Avarekalu / Lilva / Field beans in Uppittu but fresh beans is not always available to me, so I soak dry ones and cook them to add to dishes or use frozen Lilva. For tanginess, I add Lemon juice at the end or one fresh sliced Tomato.
To make Mixed Veg Uppittu:
1. Heat 1 tsp ghee in a non-stick pan. Add 1 cup Semolina/Rava and roast until Rava is golden on a medium heat and spread it on paper to cool.
2. Add 2 tbsp oil to the same pan, add 1/2 Mustard seeds, 1 tsp Cumin seeds, few curry leaves, (Cashews are optional), 2 tsp each Chana dal and Urad dal, 1 onion, finely chopped, 2-3 green chillies and fry them until soft.
3. Add 2 1/2 cups of water, enough salt, few cilantro. Add 1 cup of pre cooked (Microwave them with little water) mixed veggies like Beans, Carrots, peas, Lilva beans, one Tomato sliced. Let it boil for 5 mins.
4. Taste for salt and turn down the heat to simmer. Slowly add Rava in a stream and stir all the while to prevent clumping. Stri well, cover and let it simmer for 4-5 mins.
5. It's ready to eat. serve with crunchy Sev, Boondi and plain yogurt.

How to make these:
Asparagus Stir-fry first:
1. Pick a tender (with thinner spears) bunch of Asparagus and wipe the outside with a clean wet towel.Hold the Asparagus at the end,snap the thicker part and it will break where is it tender and not stringy.Keep them whole.
2. Heat a 2 tsp butter in a wide pan,add asparagus spears ,sprinkle some salt and stir-fry for not more 5 mins,it should still be crisp when done not limp at all.
3. Before you take it off the heat,sprinkle 1/2 tsp each of Garlic powder,Cumin pd,1/8 tsp of Chili flaked or coarsely ground pepper.
4. Serve warm on the side with a some Mayonnaise(optional) on top.
Crispy Chicken Patties next:
1. In a bowl, mix 1 lb ground chicken,1 egg, 1 tbsp Mrs.Dash no-salt Spicy seasoning or Chipotle seasoning or any you like,2 tsp Parsley,salt and pepper well.
2. Divide in to four portions,make rounds and flatten to make four patties.
3. Add 1 cup Panko, Japanese bread crumbs on a plate and coat each patties well both sides and chill in the fridge covered until you are ready.
4. Heat 1 tsp butter or Olive oil in a non-stick pan on a medium heat,add one patty and cook until reddish on the bottom for about 3 mins,flip and cook the other side until the inside is cooked well with little more butter or oil.
5. Repeat with others and serve as soon as possible,warm and crisp.
Cheese-Garlic Bread last:)
I made some home made Naan bread stuffed with Cheddar Cheese and folded over to bake and brushed with Garlic-Parsley butter when done.

To make the soup:
1. Heat 2 tsp olive oil in a deep pan, add 3 finely chopped garlic, saute for few seconds. Now 2 tsp plain flour and mix well and cook until it becomes golden in color to make a Roux. Add 1 or 1 1/2 cups of vegetable stock, whisk well.
2. Add 3-4 cups chopped fresh Tomatoes (cut and squeeze out the seeds to avoid tanginess), 2 slices of onion, 1 tbsp or more sugar, enough salt and pepper to taste, boil it until they are all soft and cooked.
3. Let the soup cool a bit, then put the whole thing in a blender. When you get a smooth soup, pour it thru' a strainer to get all the tomato skins and any solid parts left.
4. Put it back on the stove, heat it thru' or you can use the Microwave too. When done, add 1 tbsp finely chopped fresh Basil (or Thyme or Oregano) on top and a 1 tbsp fat free heavy cream or 1 tsp of Parmesan cheese or both! Garnish with a sprig of fresh Parsley.
Note: You can use 1 cup of canned Tomato sauce to replace the fresh Tomatoes if you like.
Serve the Tomato Garlic soup drizzled with fat free cream and Croutons or slice of toasted Sour cream and garlic bread I have posted above. Enjoy! :)

Bread made with tangy Sour cream, Potato flakes and spices like garlic etc makes this loaf a delectable snack to have any time of the day. It's texture is very soft inside and bit crusty outside since we add a bit a baking soda along with yeast. It bakes to a gorgeous golden color speckled with herbs and spices, toasted thick cut slices are delicious to eat. Tastes better the next day, keep it wrapped in a gallon size Zip-lock bag.
You can use wheat flour and Oat flour to replace Potato to make it healthier and skip the spices to make it plain. Add 1-2 tbsp more sugar to make it a sweet bread. Choices are unlimited when you use the basic recipe and get creative! :))
Sour Cream and Potato spiced up loaf:
A super delicious slice for you, I can't tell you how aromatic this bread is!!
Here are the ingredients:
1/2 cup Sour cream,
1/2 cup Water (warm 80F)
3 tsp dry active Yeast to add to warm water and sour cream mix.
1/2 cup dry plain Potato flakes, (Flavored potato flakes has salt etc, will make the bread salty)
1/3 cup Milk (warm).
1 tbsp sugar,
1/4 cup softened butter,
3 cups white or wheat Bread four,
1 tsp Salt,
1/2 tsp Baking soda,
1/2 tsp garlic powder,
1 tsp dry Parsley,
1 tsp Chicago Steak seasoning for grilling, (you see in the collage which has mixture of dry onion flakes, red chilli pepper, pepper, crushed coriander and cumin seeds, mixed herbs etc. or you can use any spice mix you like)
To Bake:
1. Mix sour cream and water well, heat for 40seconds in the microwave. When it's warm, add yeast and set aside for 5 mins to get foam or bubbles on top.
2. Add 1/3 cup warm milk to dry potato, mix well.
3. Add all the dry ingredients to a mixer with flat beater attachment, mix well. Add in the yeast mix and potato+milk mix and beat well.
4. Change to kneader attachment, knead this dough for 4 mins until you get soft and non-sticky dough. If the dough is too dry, add a tbsp of water at a time until you get the soft dough but do not make the dough sticky.
5. Take out the dough, put it in a non-stick loaf pan, cover and let it proof in a warm place until double, no second rising is needed.
6. Pre heat the oven to 375F. Uncover the dough, slice 1/2" deep gash on the top of the loaf and sprinkle some spice mix on top if you like.
7. Bake in the middle rack for 25 to 35 mins depending on your oven or bread is golden and sounds hollow when tapped.
8. Cool on a rack and slice when cooled.
Serve this toasted thick slice for breakfast with butter or on the side with any soup. Also makes an excellent snack with cream cheese!
You can also divide this dough into 12-16 rolls instead of one big loaf to make smaller dinner rolls as well. Enjoy! :)

Artichoke Hearts & Roasted Bell Peppers Farfalle Pasta

Here is how I made it:
1. Cooked Butterfly/Farfalle Pasta al-Dente, drained and added to a bowl.
2. Roasted green and red Bell peppers, few Tomato slices, drained canned Artichoke Hearts, cooled them for 10mins.
3. Mixed Pasta, roasted veggies, 1 tbsp Parmesan cheese, few slices of bottled Vinegary Jalapenos, 2 tbsp mixed fresh herbs like Basil, Oregano, Thyme and Parsley along with Donna's dressing and VOILA!!
Beautiful Pasta is ready to dig in. Enjoy! :)
Tomato,Peas and Carrot Uppittu

Tomato, Peas and Carrot Uppittu is another of my favorite combo to add to make Uppittu. I chop baby Carrots in to rounds. They are very sweet, adds a sweetish flavor to spicy Uppittu and for to balance the hot and sweet, I add some Tomatoes or Tomato sauce to this. Adding 1 tsp of MTR Vangibhath powder or Rasam powder to this adds a excellent flavor as well.
To make Tomato Uppittu:
1. Follow the same method as above until step 2 and add 2 1/2 cups of water, 1/2 cup frozen Green peas, 1/2 cup Tomato sauce or 2-3 Tomato chopped, 2 Carrots chopped or coarsely grated, 1 tsp spice powder of your choice (optional), let it boil.
2. Follow the rest of the method like the above recipe and you will have fragrant, colorful and tasty Uppittu!
